Skillet sun-dried tomatoes and chicken thighs

Ingredients: (All available and easy to get at Trader Joe’s) 5 or 6 chicken thighs 3 tablespoons butter (always unsalted) 3 cloves garlic, minced (Trader Joe’s has this little jar of minced garlic, it’s a great substitute, use 1/2 to 1 teaspoon) 1/2 cup julienned sun dried tomatoes in olive oil, drained 2 tablespoons freshly grated Parmesan 1/4 cup fresh basil leaves, chiffonade, for presentation From your pantry: 1/4 teaspoon dried thyme 1/4 teaspoon dried oregano (or Italian herbs) 1/2 cup chicken broth (feel free to use a little more if needed) Sea salt and freshly ground black pepper Steps:
Preheat oven to 400 degrees F.
First, wash the chicken and pat it fry, and have all your ingredients ready on the counter.
Season chicken thighs with salt and pepper, to taste.
Melt 2 tablespoons butter in a large oven-proof skillet over medium high heat.
Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side, set aside.
Melt remaining tablespoon butter in the skillet.
Add garlic, and cook, stirring frequently, about 1-2 minutes.
Stir in chicken broth, sun dried tomatoes, Parmesan, thyme, and oregano.
Bring to a boil; reduce heat and simmer until slightly thickened, about 3-5 minutes.
Return chicken to the skillet.
Place into oven and roast until completely cooked through, about 25-30 minutes. (That gives you plenty of time to get your table ready and set a romantic setting)
Serve immediately!
Optionally, garnish with fresh basil.
Side dish: I serve it over brown rice (Trader Joe’s, frozen section) just pop it in the microwave for 3 min! Bam! Amazing dinner! Enjoy, with some delicious red wine! :)
