Glazed Pork Tenderloin with Roasted Sweet Potatoes

This recipe is delish and actually very easy.. It's one of my go-tos when I don't have time to go get fresh fish.
Ingredients: 1 pork tenderloin, about 1 lb., trimmed of excess fat 2 large sweet potatoes, peeled and cut into 8 wedges each 1/4 cup Apple cider vinegar 1 Teaspoon Dijon mustard From your Pantry: Salt and freshly ground pepper, to taste 2 Tbs. extra-virgin olive oil 3 Tbs. honey Thyme Cookware: Ovenproof Skillet / pan Baking sheet Small Saucepan If you don't have an ovenproof pan, then use a skillet/pan for the stove, then a baking pan for the oven. Steps:
Preheat your oven to 450°F.
First prep your ingredients:
Have all your ingredients on the counter and ready to go.
Rinse the pork tenderloin and pat it dry.
Prep the sweet potatoes: peeled and cut into 8 wedges each
Place potatoes on a baking sheet, drizzle with 1 tbsp olive oil and 1 Tbsp. of honey.
Bake for 10 min
While the potatoes are in the oven:
Season the pork tenderloin well with salt, pepper and thyme.
In an ovenproof sauté pan over medium-high heat, warm 1 Tbsp. of olive oil until shimmering.
Sear the pork, turning occasionally, to brown all sides, 6 to 8 minutes total.
Transfer the pork to a baking sheet (or keep it in the ovenproof skillet) and add pork to oven.
Bake the pork and potatoes for another 15 min.
Let pork rest for 5 min (tent with aluminum foil).
While the pork is resting: keep the potatoes in the oven and prepare the glaze:
Don't rush, it's ok if the pork rests longer.
Combine vinegar, honey, mustard, and sprinkle some salt and thyme in a small saucepan, over medium heat.
Once it's simmering/boiling. It's ready! And everything is ready to serve! Enjoy!
Tip: Add 1 pound of fresh asparagus along with your sweet potatoes in the oven! Sprinkle salt, pepper, olive oil and shaved almonds on the same sheet pan with your potatoes! Done! Enjoy!
