Striped SeaBass

Striped SeaBass is probably my favorite fish. It's so tender and buttery, it just melts in your mouth. Typically when you buy it, it will be a filet, like on my photo below, with the skin remaining on one side. Ingredients: 2 Striped SeaBass filets (with skin on one side) (fresh from Whole Foods or The Fish Market preferably) (2 pieces, about 8 oz each) Lemons or lemon juice From your pantry: Sea salt Extra virgin olive oil Olive oil spray Cookware: 1 frying pan 1 Baking dish Steps:
Preheat your oven at 425
Season fish with salt and pepper, to taste. Optionally, also season with Italian Seasoning or Thyme.
Once the oven has reached temperature, proceed with next steps:
Heat the pan on high, add a teaspoon of olive oil in the pan
Add the SeaBass, skin side down, in the pan and sear undisturbed 2 minutes
If your pan is oven proof, place it directly in the oven.
If not, spray a baking dish with olive oil spray, transfer your fish into the baking dish and place in the oven for 10 minutes.
Remove from the oven after 10 minutes and serve immediately.
Add a little bit of butter and add a little lemon juice, to taste.
