Roasted Fingerling Potatoes

This is one of my go-to side dish. I make it once a week, it goes with just about anything, and the prep time is less than 5 minutes!

Grocery list / ingredients: Fingerling or small potatoes (1 Bag) 1 Shallot (optional) From your Pantry: Extra virgin olive oil Sea Salt Pepper Thyme Utensils / Gear: Sheet Pan Aluminum Steps: • Preheat the oven to 425° F • Cut the fingerling or mini potatoes in halves, lengthwise, put them in a bowl. • Add sea salt, pepper, thyme and 2 tablespoons of extra virgin olive oil to the potatoes, tossing to coat. Optionally, add one thinly sliced shallot • Arrange potato mixture on a sheet pan coated with cooking spray. Bake at 425° for 30 minutes. • Serve and Enjoy!
