Brown Rice and Veggies

Easy and Healthy Side Dish. It's perfect with fish. I always keep these in my freezer, so I can prep a healthy side dish at anytime. Ingredients: At Trader Joe's: Organic brown rice (frozen) Vegetable Melange (frozen veggies) From your pantry: Sea salt Extra virgin olive oil Olive oil spray Cookware: 1 frying pan A small bowl for the rice Steps: Start with the veggies:
Heat the fry pan on medium heat.
Spray a bit of olive oil spray.
Once the pan is hot, add 1/2 or all of the bag of veggies in the pan.
Stir every few minutes, for about 5 to 7 minutes.
Once cooked, reduce to very low heat, then serve.
Brown rice:
Put the brown rice in the microwave, (be sure to poke the bag with holes with a sharp knife first)
Cook for 3 minutes
Pour the cooked brown rice in a medium bowl, add a tablespoon of olive oil and sprinkle sea salt
Mix them up or serve the veggies on top of the rice.
