I love fish. I go to the Fish Market at least once a week to buy fresh fish, but I fell in love with yellowtail when our friend Jared went fishing and brought us back fresh caught yellowtail, and I tried this new recipe. Tuna, Opa and Yellowtail (all the same family) taste better pan fried (in my opinion). So here is my favorite yellowtail recipe! Enjoy! It's quick and delicious!

Ingredients Yellowtail (about 1 lb. for 2 people) (very fresh from the Fish Market or a good friend) Lemon juice (about 1/4 cup)
1 Lemon From your Pantry / Fridge: Flour Sea salt Pepper Extra virgin olive oil Butter Thyme Cookware 1 Frying pan Baking dish Steps
Rinse the yellowtail, and cut about 4 to 5 inches long, but keep the width. (See photos for size)
Place in a baking dish and put a bunch of lemon juice (about 1/4 cup)
Put flour in a plate (about 1/3 cup) and salt, pepper and thyme
One piece at a time, put the yellowtail in the flour and shake off the extra flour, each piece needs to be lightly dusted.
Once all pieces are ready, over medium temperature, add 1 or 2 tablespoons of butter to the sauce pan.
Once the butter is melted, place the yellowtail in the frying pan and cook for about 3 minutes on each side.
Don't overcook it, it should be light pink in the middle and melt in your mouth. Try a little bite to make sure it's perfect before you take it off the pan.
When it's ready, plate right away. Cut a lemon in half and sprinkle some lemon juice to taste! Side ideas: Green beans (recipe coming soon) Roasted fingerling potatoes Roasted asparagus
