Baked Chicken and Potatoes

This takes about 5 minutes to prep - it’s easy and delicious! Enjoy! Ingredients: 5 to 8 chicken thighs (skin-on optional) 1 lb small potatoes, quartered (or 1 bag of small potatoes at Trader Joes) 1 onion, quartered (red, yellow or white onion) 2 teaspoons minced garlic powder (optional) 2 tablespoons chopped fresh scallion (optional) From your Pantry: Extra virgin olive oil Sea salt and freshly ground pepper Cookware: Baking sheet/roasting pan Instructions 1. Preheat your oven to 400°F. Lightly oil a baking sheet/roasting pan or coat with nonstick spray. 2. In a large bowl, whisk together chicken thighs, potatoes, onion and garlic powder. Season to taste with salt and pepper and mix well. 3. Place chicken, potatoes and onion in a single layer onto the prepared baking pan. Add a drizzle of olive oil. 4. Roast in the oven about 25-30 minutes, until the chicken is cooked through, reaching an internal temperature of 165°F. Then broil for 2-3 minutes to make it crisp. 5. Remove from oven. Cover with foil and allow to rest for 5 minutes while the juices settle before serving. Serve hot, and, optionally, garnish with chopped scallions.
