Opah with Brown Rice and Vegetables

Here is another dinner under 10 minutes that I love!
Opah is a wonderful fish, similar to Tuna, and it's in season now. It's lean and delicious. Ingredients: Opah (fresh from Whole Foods or The Fish Market preferably) (2 pieces, about 8 oz each) At Trader Joe's: Organic brown rice (frozen) Vegetable Melange (frozen veggies) Lemons or lemon juice From your pantry: Sea salt Extra virgin olive oil
Olive oil spray Cookware: 2 frying pans A small bowl for the rice Steps:
Start with the veggies:
Heat one of the fry pan on medium / medium-high heat.
Spray a bit of olive oil spray.
Once the pan is hot, add 1/2 or 1/3 of the bag of veggies in the pan.
Stir every few minutes.
Once cooked, reduce to very low heat.
Put the brown rice in the microwave, (be sure to poke the bag with holes with a sharp knife first), cook for 3 minutes.
As soon as the rice starts in the microwave, get ready to sear the Opah!
Heat the 2nd pan on high, add a teaspoon of olive oil in the pan
Add the Opah in the pan and sear undisturbed 2 to 3 minutes on each side
The Opah should be pink in the center and golden on each side
Pour the cooked brown rice in a medium bowl, add a tablespoon of olive oil and sprinkle sea salt
Serve the brown rice, veggies and Opah with a side of lemon juice or lemon halves
Pair with iced tea, lemonade, white wine or sparkling wine. Enjoy!
