Seared Tuna and Mushroom Risotto

Easy Dinner for Two in 10 minutes: Seared Tuna Steaks, Mushroom Risotto and Salad We love this dinner. It’s very quick and fresh! Grocery list / Ingredients: 2 Tuna Steaks (Preferably fresh from Whole Foods or Fish Market) Wasabi (optional - if you ask, they will give you a little bunch for free at Whole Foods or Fish Market) At Trader Joes: Mushroom Risotto (Frozen section) Sesame Oil Soy Sauce Spring Mix or Baby Herb Salad Sesame Seeds (optional) From your pantry/fridge: Sea Salt Extra Virgin Olive Oil Balsamic Vinegar (my favorites are the Cranberry Pear White Balsamic and Fig Balsamic from Baker and Olive, Whole Foods also has some fun options) Utensils / gear: Salad Bowl

2 Large Saucepans Tongs Steps: • For the risotto, heat 4 tablespoons of water in a large saucepan, pour in the risotto and stir gently for 7 minutes over medium heat. • Remove the tuna steaks from the fridge, place them on a deep plate or bowl, pour about 6 tablespoons of soy sauce and 2 tablespoons of sesame oil . Set aside. • In your salad bowl, add the salad, a tablespoon of olive oil, a tablespoon of balsamic vinegar, and sprinkle a little sea salt and pepper. Toss. • It will only take about 3 minutes for the tuna, so make sure to set your table, pour a glass of wine and have just about everything ready at your table. Keep the risotto on really low heat until you’re ready to serve. Optionally, place your wasabi, soy sauce and little ramekins and chop sticks at your table. • Also optional: pat your tuna steaks with sesame seeds on all sides. • Turn on the heat on your 2nd saucepan/ skillet on high, for about a minute or more, allow the skillet to get very hot. Place the tuna steaks and a bit of the soy sauce/oil marinade and sear undisturbed for 1 minute. Flip the steaks and sear for one more minute. • Remove filets from the skillet and serve immediately, with the risotto and salad. • Tip: Put your vent on high and sear for a longer / shorter time based on your preference. I personally cook mine 30-45 seconds on each side. • Enjoy!
